I'm a genius. Well, someone else probably thought of this way before me, but I'm still pleased with the success I found.
Step 1: Microwave butternut squash.
Step 2: Mash butternut squash.
Step 3: Mix butternut squash into cream of chicken gravy.
Step 4: Pour gravy over noodles and chicken.
Then sit back and listen to the silence being generated by the four children as they inhale said concoction. Grant & Jacqui did raise an eyebrow when they saw that the "chicken & noodle" dinner was orange. I just told Grant that I made monkey brains for dinner and he was cool. If I had served fauxtatoes for a side dish, it would have been the healthiest dinner in the universe!!

Mixing squash (or pureed carrots or sweet potatoes) into macaroni and cheese works well, too.
You can also use it in spaghetti sauce, pancakes, homemade bread or rolls, and no one will be the wiser. It's a beautiful thing to pull one over on the kiddos.
You're nicer than me. I just make them eat it. Butternut is one they actually like a little. Esp with a sprinkle of cinnamon. Zucchini is not one I can get them to appreciate, though I don't worry about it too much. They eat up green beans, broccoli, and spinach (when I cook it, even very obviously, with meat or bread) I think they get enough good veg to give zucchini and yellow squash a pass. Have you tried roasting cauliflower for the kids? Mine like that better than regular (unless 'regular' has cheddar cheese on top). I hesitate to try mashing it because neither are all that fond of the mashed potato texture.
